Matsubara knives are, in my eyes, truly underrated.
Their latest series is the result of a collaboration between the 4th-generation blacksmith, Mr. Katsuto Tanaka, and his son, the 5th-generation, Mr. Hiroki Tanaka. Due to the many meticulous steps involved, this Ginsan knife is once again a joint effort between both generations.
This Bunka features a Ginsan (Silver #3) steel core clad in Damascus layers. Ginsan is a widely used stainless high-carbon steel known for its balanced performance, offering reliable edge retention and excellent corrosion resistance—making it suitable for users of all experience levels.
The Damascus pattern is further elevated by a mirror finish, giving the blade a refined and elegant appearance. What truly sets this knife apart—quite literally—is its generous blade height of 55 mm. This provides ample knuckle clearance for larger hands while also contributing to improved longevity over years of sharpening.
The Gyuto is the Japanese equivalent of the classic Western chef’s knife and is one of the most versatile knives in any kitchen. Designed as a true all-purpose knife, it excels at slicing, dicing, chopping, and mincing vegetables, fish, and meat with precision and ease.
Unlike the flatter profile of a Bunka, the Gyuto features a gentle curve along the cutting edge, making it ideal for both push-cutting and rocking techniques. Its fine, pointed tip offers excellent control for delicate tasks such as trimming, scoring, and intricate knife work, while the longer cutting edge provides efficiency for larger ingredients.

Care Instructions:
For the Ginsan 3 steel knives, It is a stainless steel knife. This knife will not rust but it’s essential to hand wash them with mild soap and water, then immediately dry them to prevent water spots or potential corrosion. Avoid cutting on hard surfaces like glass or granite, and store the knife in a sheath or on a magnetic strip to protect the blade.To maintain the blade’s edge and its lifespan, avoid chopping it on bones and frozen foods.
