**Care Instructions**
At its core lies Hitachi’s SLD semi-stainless steel, originally developed for cutting other steels. This alloy combines the edge retention of carbon steel with easier maintenance. However, with 12% chromium—slightly less than the 13-15% found in VG10 or Ginsan—it isn’t fully rustproof. To preserve its quality, make sure to clean and dry the blade after each use, especially when working with acidic ingredients. Remember to wipe it dry after use and apply a layer of oil ( our kurobara oil or any neutral oil ) at the end of the day before storing it
