Matsubara knives are, in my eyes, truly underrated.

Their latest series is the result of a collaboration between the 4th-generation blacksmith, Mr. Katsuto Tanaka, and his son, the 5th-generation, Mr. Hiroki Tanaka. Due to the many meticulous steps involved, this Ginsan knife is once again a joint effort between both generations.

This Bunka features a Ginsan (Silver #3) steel core clad in Damascus layers. Ginsan is a widely used stainless high-carbon steel known for its balanced performance, offering reliable edge retention and excellent corrosion resistance—making it suitable for users of all experience levels.

The Damascus pattern is further elevated by a mirror finish, giving the blade a refined and elegant appearance. What truly sets this knife apart—quite literally—is its generous blade height of 55 mm. This provides ample knuckle clearance for larger hands while also contributing to improved longevity over years of sharpening.

Bunka are versatile and agile knives. Unlike Gyuto, they feature a flatter profile which are particularly suited to push cutting techniques rather than rocking styles. The delicate sharp sword tip makes them very useful for small or intricate work like preparing garnishes.The Bunka is a bonafide badass, like a kitchen knife in a leather jacket. It is a multi-purpose knife akin to the Santoku. “Bunka” translates to “culture". This multi-purpose kitchen knife is great for dicing, slicing or mincing. Like a santoku, it's a cross between the nakiri and a gyuto, just a little more badass looking.

With 180mm blade length, this chef's knife is a knife with all-rounder qualities. The knife has a slight radius to the blade tip and can be easily used for vegetables such as onions, leeks, carrots, etc. in a cradle cut.The tip gives the knife ideal properties for fine cuts on fish, vegetables or even meat.

3. Please make sure you apply a layer of oil after wash and dry to prevent it from rust during storage.
4. Always wash your knife after cutting something acidic as it will react to the blade and cause a burnt mark or worst.
