The sujihiki is also known as slicer. It is intended for slicing big block of meat or fish. The short height of the blade creates less friction and also reduce possibility of the meat sticking to blade when slicing. The blade draws through fish and meat even more effortlessly with the nashiji finish. The sujihiki has a K-Tip, also known as kiritsuke for a much more precise and accurate performance.
The Matsubara Blue #2 Nashiji Sujihiki 270 mm has a profile that is quite flat at the heel end and then transitions into a nice curved belly about halfway along the edge. Blade height is very generous for a 270mm Kiritsuke. This is a robust blade in size and weight which will find favor with users looking for a knife that feels solid and stiff. The heft and strength are confidence-inspiring. It comes with a very nice octagonal handle.
The Nashiji finish on the blade was inspired by the Japanese pear, giving a lesser contact between the ingredients and the blade to prevent the sliced item from sticking on it. The characteristic of Katsuto Tanaka's masterpiece would be his extraordinary tall blade and heel giving a very good knuckle clearance along with excellent weight.
